1 bay leaf

125ml (4½fl oz) red wine

1 × 400-g (14-oz) tin chopped tomatoes

1 tablespoon tomato paste (concentrated purée)

125ml (4½fl oz) beef stock

Salt and freshly ground black pepper

FOR THE BÉCHAMEL SAUCE

850ml (29fl oz) milk

½ onion

2 bay leaves

75g (2½oz) butter

75g (2½oz) plain (all-purpose) flour
